For the rice:
- 1 cup rice + 2 cups water
- 1/2 tablespoon turmeric
- 1 bay leaf 🍃
- 1/4 teaspoon Pepper
Grill or bake some chicken breast/wings or boneless chicken thighs (600 g).
For the diced veggies:
- 2 big tomatoes (240g) 🍅
- 100g red onion
- 1 large cucumber (140g) 🥒
- + 3 tablespoons of dried tomatoes (canned)
For the final bowl/plate:
- 1/4 of the cooked rice
- 1/4 of the cooked chicken
- 1/4 of the diced veggies
- 2 tablespoons hummus
- Sprinkle of paprika
- Sprinkle of feta cheese.
